  • 1/2 cup (100 g) brown sugar
  • 1/4 cup (60 g) pumpkin puree, preferably unsweetened

  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a saucepan, combine 1 cup water, 1 cup granulated sugar, and 1/2 cup brown sugar. Bring to a gentle boil over medium heat, stirring occasionally until sugars dissolve, about 5 minutes.
  2. Lower heat to medium-low. Stir in 1/4 cup pumpkin puree, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/2 teaspoon ginger, 1/4 teaspoon cloves, and a pinch of salt. Whisk until smooth and spices are evenly distributed.
  3. Simmer gently for 10 minutes, stirring frequently, until syrup thickens to a pourable honey consistency. Avoid scorching by lowering heat if needed.
  4. Remove from heat and stir in 1 teaspoon vanilla extract.
  5. Optional: Strain syrup through a fine mesh sieve or cheesecloth for a smooth texture. Let cool completely before storing in a heatproof jar or bottle.
