A fun and healthy Halloween appetizer that turns fresh vegetables into a silly monster face. Perfect for parties, this easy veggie tray comes together in 15 minutes and is served with a creamy homemade ranch dip.

Ingredients

Scale
  • 1 large head of broccoli, cut into small florets
  • 1 large red bell pepper, seeded and sliced
  • 1 large yellow bell pepper, seeded and sliced into strips
  • 1 cup grape or cherry tomatoes
  • 1 large cucumber, sliced into rounds
  • 1 cup baby carrots
  • 1 cup snow peas or snap peas
  • 1 cup cauliflower florets
  • 1/2 cup black olives, pitted
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 packet ranch seasoning mix (about 1 oz)
  • 1/4 cup buttermilk
  • 1 tablespoon fresh chives, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

  1. Wash and dry all vegetables thoroughly with paper towels.
  2. In a small mixing bowl, combine sour cream, mayonnaise, ranch seasoning mix, buttermilk, chives, garlic powder, and onion powder. Whisk until smooth. Season with salt and pepper to taste. Cover and refrigerate for at least 15 minutes to let flavors meld.
  3. Cut broccoli into small, uniform bite-sized florets. Reserve stems for extra crunch if desired.
  4. Slice red bell pepper: cut one half into a wide curved strip for the monster’s mouth, and the other half into small triangles for teeth or spikes. Slice yellow bell pepper into long thin strips for horns.
  5. Slice cucumber into thick rounds (about 1/4 inch thick). Keep grape tomatoes whole.
  6. Place the small serving bowl of ranch dip in the center of a large serving platter. Arrange broccoli florets in a thick shaggy circle around the dip bowl, with florets pointing outward to create fur.
  7. Place two cucumber rounds above the dip bowl for the whites of the eyes. Top each with a black olive or grape tomato for pupils. Use a dab of cream cheese to secure if needed.
  8. Below the dip bowl, arrange the red bell pepper strip into a wide grin. Add yellow bell pepper triangles as teeth.
  9. Stick yellow bell pepper strips into the top of the broccoli fur for horns. Use snow peas or snap peas as bushy eyebrows above the eyes.
  10. Fill empty spaces on the platter with baby carrots, cauliflower florets, extra cucumber rounds, and tomatoes. Ensure everything is touching and looks full.
  11. Place remaining black olives around the tray as warts or spots. Adjust any elements as needed.

Notes

For best results, dry vegetables thoroughly to prevent soggy dip. Make ranch dip a day ahead for enhanced flavor. Use a themed dip bowl (like a small cauldron) for extra Halloween fun. If monster parts slide off, use toothpicks to secure them (warn guests). Keep tray refrigerated until serving.
