  • 1 pound (450 g) ground beef (80/20 recommended)
  • 4 cloves garlic, minced
  • 8 ounces (225 g) pasta (penne, rotini, or shells; gluten-free optional)
  • 2 cups (480 ml) chicken broth (or vegetable broth)
  • 1 cup (100 g) grated parmesan cheese
  • ½ cup (120 ml) heavy cream
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Heat 2 tablespoons olive oil over medium-high heat in a large skillet. Add ground beef, breaking it up with a spoon. Cook until browned with a bit of crust, about 8-10 minutes. Season lightly with salt and pepper. Remove excess fat if desired, keeping some for richness.
  2. Lower heat to medium. Add finely chopped onion to the skillet and cook until softened and translucent, about 2 minutes. Stir in minced garlic and cook until fragrant, about 30 seconds to 1 minute. Avoid burning the garlic.
  3. Add uncooked pasta and chicken broth to the skillet. Stir to distribute ingredients evenly. The broth should just cover the pasta. Season with additional salt and pepper.
  4. Bring to a gentle boil, then reduce heat to maintain a simmer. Cover skillet with a lid and cook pasta, stirring occasionally, for 10-12 minutes until pasta is tender and most liquid is absorbed. Add more broth or water if it looks too dry.
  5. Remove skillet from heat. Stir in heavy cream and grated parmesan cheese vigorously until cheese melts and sauce is creamy. Adjust seasoning to taste.
  6. Garnish with chopped fresh parsley if desired. Serve hot directly from the skillet.

Notes

Do not rush browning the beef to develop rich flavor. Add garlic after onions soften to avoid burning. Stir pasta occasionally while simmering to prevent sticking. Stir in parmesan off heat to keep sauce creamy. Adjust sauce thickness with broth or pasta water if needed. Leftovers keep well refrigerated for up to 3 days; reheat gently with broth or cream. Freezing not recommended due to cream.
