This Easy Garlic Butter Baked Cod is a quick, simple, and delicious weeknight dinner. Flaky cod fillets are baked in a rich garlic butter sauce with lemon and paprika, ready in under 20 minutes.

Ingredients

Scale
  • 4 cod fillets (about 6 oz each)
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • Fresh parsley and lemon wedges for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Let cod fillets sit at room temperature for about 10 minutes.
  2. Pat the cod fillets dry with paper towels.
  3. Season both sides of the fillets with salt and pepper.
  4. In a small bowl, mix together the melted butter, minced garlic, lemon juice, paprika, and dried parsley until well combined.
  5. Place the cod fillets in a 9×13 inch baking dish, leaving space between them.
  6. Pour the garlic butter mixture over the fillets, using a spoon or pastry brush to coat evenly.
  7. Bake for 12-15 minutes, until the fish is opaque and flakes easily with a fork (internal temperature of 145°F).
  8. Remove from the oven and let rest for 2 minutes, tented loosely with foil.
  9. Spoon the pan juices over the fillets before serving.
  10. Garnish with fresh parsley and lemon wedges if desired.

Notes

For best results, let cod sit at room temperature for 10 minutes before baking. Pat fillets very dry to avoid steaming. Don’t overcook; cod goes from perfect to dry quickly. Double the sauce for extra flavor. Leftovers keep in the fridge for up to 2 days; reheat gently in a low oven.
