  • 2 cups (480 ml) plain Greek yogurt (full-fat recommended)
  • 1Β½ cups (225 grams) fresh berries (strawberries hulled and sliced, blueberries, raspberries)
  • 1 cup (120 grams) granola with nuts and seeds
  • 2 tablespoons honey or maple syrup (optional)
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest (optional)

Instructions

  1. In a medium mixing bowl, combine 2 cups (480 ml) of plain Greek yogurt with 2 tablespoons of honey or maple syrup and 1 teaspoon of vanilla extract. Stir gently until smooth and creamy. Add 1 teaspoon of lemon zest if desired.
  2. Rinse 1Β½ cups (225 grams) of fresh berries under cold water. Hull and slice strawberries if using. Gently pat dry with a kitchen towel.
  3. In serving glasses or bowls, spoon a ΒΌ cup (60 ml) of the yogurt mixture into the bottom of each. Add a layer of mixed berries (about ΒΌ cup / 40 grams), then a layer of granola (about 2 tablespoons / 15 grams). Repeat layers until the glass is full, finishing with a sprinkle of granola on top.
  4. Serve immediately for crunchy granola or chill for 10-15 minutes for softer granola. Avoid longer chilling to prevent sogginess.

Notes

Use thick Greek yogurt for best texture. Always add granola last to keep it crunchy. Prep berries the night before to save time but dry well to avoid sogginess. Adjust honey or maple syrup based on yogurt and berry sweetness. For dairy-free, use coconut or almond milk yogurt and gluten-free granola.
