  • 1 tablespoon granulated sugar
  • 12 fl oz (355 ml) beer, room temperature (lager, pale ale, or amber beer recommended)
  • 3 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×5 inch (23×13 cm) loaf pan with butter or non-stick spray.
  2. In a large bowl, whisk together 3 cups all-purpose flour, 1 tablespoon baking powder, 1 teaspoon salt, and 1 tablespoon granulated sugar until evenly combined.
  3. Slowly pour in 12 fl oz room-temperature beer. Stir gently with a wooden spoon or spatula until just combined. The batter will be thick and lumpy.
  4. Spoon the batter into your prepared loaf pan and smooth the top with the back of a spoon, filling about 3/4 of the pan.
  5. Drizzle 3 tablespoons melted unsalted butter evenly over the top.
  6. Place the pan on the middle rack and bake for 45-50 minutes. Start checking around 40 minutes by inserting a toothpick into the center; it should come out clean or with a few moist crumbs but no raw batter.
  7. Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely or slice warm.

Notes

Use room temperature beer for best rise. Do not overmix the batter; it should remain lumpy. If crust browns too fast, tent with foil halfway through baking. Butter brushing the top before and during baking adds moisture and crunch. Variations include adding cheese, herbs, or using gluten-free flour blends.
