  • 1 (10.5 oz) can cream of mushroom soup
  • 1 packet (1 oz) dry onion soup mix
  • 1/2 cup water or low-sodium chicken broth
  • Salt and pepper to taste
  • 1 tablespoon cornstarch (optional, for thicker gravy)
  • 2 tablespoons cold water (optional, for cornstarch slurry)
  • Fresh parsley for garnish (optional)

Instructions

  1. Lightly spray the inside of a 6-quart slow cooker with non-stick cooking spray.
  2. In a medium bowl, whisk together the cream of mushroom soup, dry onion soup mix, and 1/2 cup water or chicken broth until smooth.
  3. Pat the pork chops dry with paper towels and season both sides lightly with salt and pepper.
  4. Place the seasoned pork chops in the bottom of the slow cooker in a single layer.
  5. Pour the soup mixture evenly over the pork chops, making sure each chop is mostly covered.
  6. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the pork is fork-tender.
  7. Optional: About 15 minutes before serving, mix 1 tablespoon cornstarch with 2 tablespoons cold water to make a slurry. Stir into the gravy and cook on HIGH, uncovered, for 10 to 15 minutes until thickened.
  8. Turn off the slow cooker and let the pork chops rest in the gravy for 5 minutes before serving. Transfer to a platter and spoon gravy over the top. Garnish with parsley if desired.

Notes

For extra flavor, sear the pork chops in a hot skillet with oil for 2-3 minutes per side before adding to the slow cooker. Don’t lift the lid during cooking to maintain heat. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
