Easy Crockpot Chicken Tortilla Soup for Football Sundays

A hands-off, slow-cooker chicken tortilla soup with smoky, bold flavor, perfect for game day. Just toss everything in before kickoff and have a steaming bowl ready by halftime.

  • 1.5 pounds boneless, skinless chicken thighs or breasts
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • 1 (10-ounce) can red enchilada sauce
  • 4 cups low-sodium chicken broth
  • 1 cup frozen or canned corn (drained)
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 tablespoon mild chili powder
  • 1 chipotle pepper in adobo, minced, plus 1 teaspoon adobo sauce
  • 2 tablespoons fresh lime juice
  • Salt and pepper to taste
  • For toppings: crushed tortilla chips, shredded Monterey Jack cheese, diced avocado, fresh cilantro, sour cream, lime wedges

Instructions

  1. Dice the onion and mince the garlic.
  2. Place the chicken thighs in the bottom of a 6-quart or larger slow cooker. Season lightly with salt and pepper.
  3. Add the fire-roasted tomatoes (with juices), enchilada sauce, and chicken broth. Stir gently to combine.
  4. Add the diced onion, minced garlic, corn, and black beans. Stir again.
  5. Add the cumin, chili powder, and minced chipotle pepper with adobo sauce. Stir once more.
  6. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours.
  7. Carefully remove the chicken to a cutting board and shred with two forks. Return the shredded chicken to the pot.
  8. Stir in the fresh lime juice. Taste and adjust seasoning with salt, pepper, or more lime juice as needed.
  9. Let the soup sit on the warm setting for 10-15 minutes before serving.
  10. Ladle into bowls and top with crushed tortilla chips, cheese, avocado, cilantro, sour cream, and lime wedges.

Notes

For best flavor, toast cumin and chili powder in a dry skillet for 30 seconds before adding. Always add lime juice at the end to preserve brightness. For a thicker broth, mash half a cup of black beans before adding. Leftovers keep in the refrigerator for up to 5 days and freeze for up to 3 months.
