Easy Crockpot Apple Cider Cookies with Maple Glaze

Soft, chewy cookies packed with real apple cider flavor, made by reducing cider in a crockpot, then topped with a sweet maple glaze. Perfect for fall gatherings and cozy nights in.

  • 4 cups apple cider (unfiltered is best)
  • 1 cinnamon stick
  • 2 ½ cups all-purpose flour (spooned and leveled)
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg (freshly grated if possible)
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ⅓ cup reduced apple cider syrup (cooled)
  • 1 ½ cups powdered sugar, sifted
  • 3 tablespoons pure maple syrup
  • 2 tablespoons heavy cream (or milk for dairy-free)
  • Pinch of salt

Instructions

  1. Reduce the apple cider: Pour 4 cups apple cider into crockpot, add cinnamon stick. Cook on low, uncovered, for 4-5 hours until reduced to about ⅓ cup (syrupy, dark amber). Remove cinnamon stick, let cool completely. Can be made 1-2 days ahead and refrigerated.
  2. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  3. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  4. In a large bowl, beat softened butter, granulated sugar, and brown sugar with electric mixer on medium speed until light and fluffy (2-3 minutes). Scrape down sides as needed.
  5. Beat in egg and vanilla extract until combined. Add cooled reduced apple cider syrup, mix until just incorporated. Batter will look loose.
  6. Gradually add dry ingredients to wet ingredients, mixing on low until just combined. Do not overmix. Dough will be soft and slightly sticky.
  7. Cover bowl with plastic wrap and refrigerate dough for at least 30 minutes (1 hour preferred).
  8. Using a cookie scoop, drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart. Bake for 10-12 minutes, until edges are set and lightly golden, centers still soft.
  9. Let cookies cool on baking sheet for 5 minutes, then transfer to wire cooling rack to cool completely.
  10. Make the glaze: In a small bowl, whisk together sifted powdered sugar, maple syrup, heavy cream, and pinch of salt until smooth. Adjust consistency with more cream or powdered sugar as needed.
  11. Once cookies are completely cool, drizzle glaze over tops. Let set for 15-20 minutes before serving.

Notes

Chilling the dough is crucial to prevent spreading. For best flavor, use unfiltered apple cider and real maple syrup. The cider reduction can be made ahead. Cookies can be frozen unglazed for up to 3 months.
