  • 2 tablespoons olive oil (extra virgin)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme (or 1 tablespoon fresh, finely chopped)
  • 1 teaspoon dried oregano (or rosemary as substitute)
  • 1 lemon, thinly sliced
  • Salt and black pepper, to taste
  • 1 bunch asparagus (about 1 lb / 450 g), trimmed
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 425Β°F (220Β°C) and allow it to reach temperature.
  2. Rinse and trim the woody ends off the asparagus. Place in a mixing bowl and drizzle with 1 tablespoon olive oil. Sprinkle with salt, pepper, and optional red pepper flakes. Toss to coat evenly.
  3. Pat dry the salmon fillets with paper towels. Place skin-side down in a bowl or plate. Drizzle with 2 tablespoons olive oil and sprinkle garlic powder, dried thyme, oregano, salt, and pepper. Toss gently to coat without rubbing the skin.
  4. Line a rimmed baking sheet with parchment paper or foil. Arrange salmon fillets skin-side down on one half of the sheet pan, spaced slightly apart.
  5. Place the asparagus on the other half of the pan, spreading them out to roast rather than steam. Nestle lemon slices over the salmon and asparagus.
  6. Roast in the preheated oven for 12-15 minutes until salmon flakes easily with a fork and skin is crisped, and asparagus is tender with browned tips.
  7. Optional: For extra crispiness, broil for the last 2 minutes, watching closely to prevent burning.
  8. Remove from oven and let rest for 2 minutes. Squeeze fresh lemon juice over everything before serving.

Notes

Ensure salmon fillets are completely dry before seasoning to achieve crispy skin. Avoid overcrowding asparagus to prevent steaming. Use a rimmed sheet pan for even heat distribution and easier cleanup. Check salmon doneness early if fillets vary in thickness. Broiling at the end adds extra crispiness but watch carefully to avoid burning.
