  • 10 fresh basil leaves, finely chopped
  • 1 tablespoon balsamic vinegar (optional)
  • 1 tablespoon extra-virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • Optional garnishes: grated Parmesan cheese or shaved Pecorino Romano
  • Optional garnishes: red pepper flakes

Instructions

  1. Preheat your oven to 400Β°F (200Β°C) or heat a grill pan over medium-high heat (about 5 minutes).
  2. Slice the baguette into Β½-inch thick pieces and arrange them on a baking sheet in a single layer.
  3. Brush each bread slice lightly with 2 tablespoons of extra-virgin olive oil.
  4. Toast the bread in the oven or on the grill pan for 5-7 minutes, flipping halfway through, until golden and crispy. Watch carefully to avoid burning.
  5. While the bread toasts, combine diced tomatoes, minced garlic, chopped basil, balsamic vinegar (if using), 1 tablespoon olive oil, salt, and black pepper in a mixing bowl. Stir gently and let sit for 5 minutes.
  6. Once the bread has cooled slightly but is still warm, spoon the tomato mixture generously on top of each slice.
  7. Optionally, sprinkle with Parmesan cheese or red pepper flakes before serving.
