  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons fresh lemon juice
  • Pinch of salt

Instructions

  1. Peel, pit, and chop about 4 pounds of fresh peaches into roughly 1-inch pieces.
  2. Place the chopped peaches in the slow cooker. Add 3/4 cup granulated sugar, 1 1/2 teaspoons ground cinnamon, 1 teaspoon pure vanilla extract, 2 tablespoons fresh lemon juice, and a pinch of salt.
  3. Stir the mixture gently with a spatula to combine everything evenly.
  4. Cover and cook on the low setting for 6 hours without opening the lid frequently.
  5. After 6 hours, check the consistency. If too runny, cook uncovered for an additional 30 minutes to 1 hour.
  6. Use an immersion blender to puree the peach mixture until smooth and creamy. If using a regular blender, let the mixture cool slightly, blend in batches, and return to the slow cooker to keep warm.
  7. Taste and adjust by adding more cinnamon, vanilla, or sugar if desired.
  8. Let the peach butter cool to room temperature, then transfer to sterilized jars or airtight containers. Store in the refrigerator for up to 3 weeks or freeze for longer storage.

Notes

For easier peeling, blanch peaches in boiling water for 30 seconds then plunge into ice water. Avoid opening the slow cooker lid frequently to retain heat. Use ground cinnamon instead of sticks for smoother flavor. Add vanilla extract near the end of cooking to preserve flavor. Adjust sugar to taste depending on peach sweetness.
