  • 1/4 cup (60 ml) mayonnaise

  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Wash and dry the cucumbers thoroughly. Slice into 1/4-inch (6 mm) thick rounds or lengthwise spears, as preferred.
  2. In a medium bowl, combine apple cider vinegar, water, sugar, and kosher salt. Whisk until sugar and salt dissolve completely (2-3 minutes).
  3. In a separate bowl, whisk together mayonnaise, sour cream, black pepper, and chopped fresh dill until smooth and fragrant (about 5 minutes).
  4. Add sliced garlic cloves to the cucumbers in a large mixing bowl or directly into a glass jar.
  5. Pour the vinegar brine over the cucumbers and garlic, ensuring they are fully submerged. Let sit for 15 minutes to soften cucumbers and layer flavors.
  6. After 15 minutes, drain the brine off, reserving about 2 tablespoons. Gently toss cucumbers and garlic with the creamy dill dressing. Add reserved brine drop by drop to loosen dressing if needed.
  7. Transfer the creamy cucumber mixture into a glass jar or airtight container, press down gently, and seal tightly.
  8. Refrigerate for at least 24 hours before serving for best flavor and texture.
