Easy 5-Minute Peanut Butter Overnight Oats

These easy 5-minute peanut butter protein overnight oats are creamy, filling, and require no cooking. Perfect for busy mornings, they’re made with simple ingredients and can be prepped in advance for a grab-and-go breakfast.

  • 1/2 cup (45g) old-fashioned rolled oats
  • 1/2 cup (120ml) milk of choice (whole, oat, almond, or 2%)
  • 1/4 cup (60g) plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons (32g) creamy peanut butter (natural, no added sugar or oil)
  • 1 scoop (about 30g) vanilla protein powder (whey or plant-based)
  • 1 tablespoon (12g) chia seeds (optional)
  • 1–2 teaspoons maple syrup or honey (optional, adjust to taste)
  • Pinch of salt

Instructions

  1. Combine the dry ingredients: In a jar or container, add the rolled oats, chia seeds, protein powder, and a pinch of salt. Stir to break up any clumps in the protein powder.
  2. Add the wet ingredients: Pour in the milk, Greek yogurt, peanut butter, and maple syrup or honey (if using). Do not stir yet.
  3. Mix thoroughly: Stir vigorously for about 30 seconds, scraping the bottom and corners of the jar to fully incorporate the peanut butter. If peanut butter is thick, warm it in the microwave for 10 seconds first.
  4. Taste and adjust: Before sealing, taste a tiny bit of the mixture. Adjust sweetness, salt, or peanut butter intensity as needed. Add a splash more milk if too thick, or extra maple syrup if desired.
  5. Seal and refrigerate: Screw the lid on tightly and refrigerate for at least 4 hours, but ideally overnight (8-12 hours).
  6. Enjoy cold or warm: In the morning, stir the oats. If too thick, add a splash of milk. Eat cold or microwave for 45-60 seconds (remove lid first if using a microwave-safe jar).

Notes

For best texture, use old-fashioned rolled oats (not quick or steel-cut). If using plant-based milk, choose unsweetened to control sweetness. If skipping chia seeds, reduce milk by 2 tablespoons. Add fresh toppings like banana slices or berries just before serving to prevent mushiness. Oats keep in the fridge for up to 5 days. Do not freeze.
