  • ½ teaspoon celery seed
  • 1 tablespoon fresh lemon juice

Instructions

  1. Rinse the green and red cabbage under cold water and pat dry. Remove any tough outer leaves. Using a sharp knife or mandoline slicer, shred the cabbage finely. Shred the carrots using a grater or food processor. Place all shredded veggies in a large mixing bowl.
  2. In a smaller bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, fresh lemon juice, celery seed, salt, and black pepper. Taste the dressing and adjust seasoning as needed. If you want a hint of sweetness, add a pinch of stevia or erythritol now and whisk again.
  3. Pour the dressing over the shredded vegetables. Using a sturdy spoon or spatula, toss everything gently but thoroughly so every shred is coated. Avoid over-mixing or crushing the veggies to keep them crunchy.
  4. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes to let the flavors meld and the cabbage soften slightly while keeping crunch.
  5. Before serving, give the coleslaw one last gentle toss. Taste and add a pinch more salt or lemon juice if needed. Serve chilled or at room temperature.
