  • 2 tablespoons neutral oil (avocado or vegetable oil)
  • Coarse kosher salt
  • Freshly cracked black pepper
  • All-purpose flour (optional, for dusting)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped
  • Pinch of red pepper flakes

Instructions

  1. Remove pork chops from the refrigerator and let them sit at room temperature for 15-20 minutes. Pat them very dry with paper towels.
  2. Season both sides of the chops generously with kosher salt and black pepper. If using flour, lightly dredge the chops and shake off excess.
  3. Heat a cast iron skillet over medium-high heat. Add the neutral oil and heat until it shimmers.
  4. Sear the pork chops in the hot pan for 3-4 minutes per side until a deep golden-brown crust forms. Cook in batches if necessary to avoid overcrowding.
  5. Reduce heat to medium. Add butter to the pan. Once melted and foaming, add garlic, thyme, parsley, and red pepper flakes.
  6. Tilt the pan and baste the pork chops continuously with the hot garlic herb butter for 3 minutes.
  7. Cook until the internal temperature reaches 140°F (60°C).
  8. Remove chops from the pan and let rest on a warm plate, loosely covered with foil, for 5 minutes. Pour remaining garlic butter over the chops before serving.

Notes

Patting the pork chops dry is crucial for a good sear. Do not move the meat too much in the pan to ensure a crispy crust. Use an instant-read thermometer to prevent overcooking; pull at 140°F as the temperature will rise to 145°F during resting. For a dairy-free option, substitute butter with ghee or olive oil.
