Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  2. Place the cut sweet potato cubes in a large bowl.
  3. In a small bowl, whisk together the melted butter, maple syrup, garlic powder, cinnamon, ginger, salt, and black pepper.
  4. Pour the maple mixture over the sweet potatoes and toss gently until evenly coated. Spread them in a single layer on the baking sheet, ensuring space between cubes.
  5. Roast for 20 minutes.
  6. While potatoes roast, make the streusel: In a small bowl, combine pecans, brown sugar, flour, a pinch of salt, and the cubed cold butter. Mix with fingers or a fork until the mixture resembles coarse crumbs.
  7. Remove the baking sheet from the oven. Sprinkle the pecan streusel evenly over the partially roasted sweet potatoes.
  8. Return to the oven and roast for another 15-20 minutes, or until potatoes are tender and streusel is golden brown and crunchy.
  9. Let cool for 5 minutes before serving.
