  • 2 large eggs, room temperature
  • 1¾ cups whole milk (420 ml)
  • ½ cup unsalted butter (115 g), melted
  • 1 teaspoon pure vanilla extract
  • 8 thick-cut bacon slices (natural cure, no added nitrates)
  • ¼ cup pure maple syrup (60 ml), preferably Grade A amber
  • Freshly cracked black pepper, to taste
  • Optional toppings: butter for spreading, extra maple syrup for drizzling, fresh fruit like sliced bananas or berries

Instructions

  1. Preheat oven to 400°F (200°C). Place a wire rack over a baking sheet. Lay bacon slices on the rack in a single layer.
  2. Brush each bacon slice evenly with maple syrup and sprinkle with freshly cracked black pepper.
  3. Bake bacon for 15-20 minutes until crispy and caramelized, checking around 12 minutes to avoid burning.
  4. While bacon bakes, whisk together flour, baking powder, sugar, and salt in a large bowl.
  5. In another bowl, beat eggs, then add milk, melted butter, and vanilla extract. Pour wet ingredients into dry and stir just until combined; batter will be slightly lumpy.
  6. Preheat waffle iron according to manufacturer instructions and lightly grease if needed.
  7. Pour about ½ cup (120 ml) batter onto waffle iron and cook for 4-6 minutes until golden and crisp.
  8. Keep cooked waffles warm in a low oven (200°F / 93°C) on a baking sheet while cooking remaining waffles.
  9. To assemble, spread a thin layer of butter on one waffle, layer with 3-4 slices of warm maple bacon, then top with another waffle.
  10. Press gently to hold sandwich together and serve immediately with extra maple syrup and optional fresh fruit.

Notes

Use thick-cut bacon for best texture. Brush bacon with maple syrup without soaking to achieve a sweet-crisp glaze. Avoid overmixing waffle batter to keep waffles tender. Keep waffles warm on a wire rack in a low oven to maintain crispness. Reheat leftovers gently in toaster oven or skillet to preserve texture.
