A refreshing fall salad featuring crisp Honeycrisp apples, toasted walnuts, and mixed greens tossed in a sweet and tangy maple vinaigrette.

Ingredients

  • 2 large Honeycrisp apples, cored and thinly sliced
  • 4 cups mixed greens (baby spinach and arugula)
  • 1/2 cup walnuts, toasted
  • 1/2 cup crumbled blue cheese
  • 1/4 cup red onion, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Heat a small skillet over medium heat. Add walnuts in a single layer and toast for 3-4 minutes, shaking frequently, until nutty and slightly darker. Remove to a plate to cool.
  2. In a small jar or bowl, combine olive oil, maple syrup, apple cider vinegar, Dijon mustard, salt, and pepper. Whisk or shake vigorously until emulsified. Taste and adjust seasoning.
  3. Core and thinly slice the Honeycrisp apples. Thinly slice the red onion. If the onion is too sharp, soak slices in ice water for 10 minutes, then drain and pat dry.
  4. Place mixed greens in a large serving bowl. Arrange apple slices and red onion on top.
  5. Sprinkle crumbled blue cheese and toasted walnuts over the top.
  6. Just before serving, drizzle the vinaigrette over the salad. Gently toss with tongs to coat lightly. Serve immediately.

Notes

To prevent apples from browning, toss sliced apples in a little lemon juice or vinegar immediately after cutting. For meal prep, store dressing separately and add just before eating to maintain crispness. Do not reheat this salad.
