  • 8 ounces full-fat cream cheese, softened to room temperature
  • 1/2 cup full-fat sour cream
  • 1/2 cup mashed roasted garlic
  • 1 1/2 cups shredded cheese (blend of sharp cheddar and mozzarella), divided
  • 2 tablespoons finely chopped fresh herbs (parsley, chives, or thyme)
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional: 1/4 cup diced sun-dried tomatoes or roasted red peppers

Instructions

  1. Preheat oven to 400°F (200°C) if roasting fresh garlic. Roast garlic heads wrapped in foil for 40 minutes, then squeeze cloves out and mash into a paste. If using jarred garlic, drain and mash.
  2. In a medium mixing bowl, combine softened cream cheese, sour cream, mashed roasted garlic, garlic powder, salt, and pepper. Beat with a hand mixer or fork until completely smooth.
  3. Stir in chopped fresh herbs and 1 cup of the shredded cheese until evenly distributed.
  4. Spread the mixture evenly into an 8×8 inch broiler-safe baking dish.
  5. Sprinkle the remaining 1/2 cup of shredded cheese evenly over the top.
  6. Broil on high for 3-5 minutes, watching closely, until the cheese is melted, bubbly, and golden brown.
  7. Remove from oven and let cool for 5 minutes to allow the dip to set before serving.

Notes

Ensure cream cheese is fully softened to avoid lumps. Watch the dip closely under the broiler as cheese can burn quickly. Letting the dip cool for 5 minutes helps it set and cling to chips rather than sliding off. The dip is naturally gluten-free if served with GF chips or vegetables.
