A simple and quick recipe for perfectly crispy toast topped with a creamy, tangy avocado mixture. Ideal for breakfast or brunch, this toast combines a crunchy base with a smooth avocado topping for a satisfying and delicious meal.

  • 2 slices thick sturdy bread (about 60g each), such as sourdough or rustic country loaf
  • 1 ripe Hass avocado, peeled and pitted
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon extra virgin olive oil
  • Pinch of flaky sea salt or kosher salt
  • Freshly cracked black pepper, to taste
  • Optional toppings: chili flakes, microgreens, cherry tomato halves

Instructions

  1. Slice the bread into about 3/4-inch thick slices if not pre-sliced.
  2. Toast the bread slices in a toaster or on a preheated grill pan over medium heat for 3 to 4 minutes per side until golden brown and crispy.
  3. Scoop the avocado flesh into a small bowl. Add lemon juice, olive oil, salt, and pepper.
  4. Mash the avocado mixture with a fork until creamy but still slightly chunky.
  5. Spread the creamy avocado mixture evenly over each slice of hot toast.
  6. Add optional toppings such as chili flakes, microgreens, or cherry tomato halves.
  7. Serve immediately while the toast is warm and crispy.

Notes

Brush bread with a little olive oil before toasting for extra crispiness. Do not skip lemon juice in avocado to prevent browning.
