Crispy Delicata Squash: 5-Step Easy Maple Tahini

A simple, healthy side dish featuring roasted delicata squash rings tossed in olive oil and served with a creamy, savory-sweet maple tahini sauce. It is naturally vegan, gluten-free, and ready in under 40 minutes.

  • 1 delicata squash (medium-sized, firm)
  • 2 tablespoons extra virgin olive oil
  • Sea salt and black pepper to taste
  • 1/4 cup tahini (stirred well)
  • 2 tablespoons pure maple syrup
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 2–3 tablespoons warm water
  • Optional toppings: toasted pumpkin seeds, chopped parsley, pomegranate arils

Instructions

  1. Preheat oven to 400°F (200°C) and let it fully preheat for at least 10 minutes.
  2. Wash the delicata squash thoroughly. Cut off the stem and tail ends, then slice into 1/2-inch thick rings. Scoop out seeds from the center ring.
  3. In a large bowl, toss squash rings with olive oil, salt, and pepper until evenly coated.
  4. Arrange squash in a single layer on a parchment-lined baking sheet, ensuring pieces do not overlap.
  5. Roast for 20-25 minutes, flipping halfway through, until edges are caramelized and a fork slides through easily.
  6. While squash roasts, whisk together tahini, maple syrup, lemon juice, minced garlic, and warm water until smooth and creamy. Adjust consistency with more water if needed.
  7. Plate the hot squash immediately and drizzle generously with the maple tahini sauce. Add optional toppings and serve warm.

Notes

Do not overcrowd the pan to ensure crispiness. Tahini separates, so stir it well before using. If the squash edges burn too quickly, cover loosely with foil. Reheat leftovers in an air fryer or toaster oven to restore crispness.
