  • 1 tsp toasted sesame oil
  • 1 tbsp cornstarch mixed with 1 tbsp cold water (slurry)
  • Sesame seeds and chopped green onions for garnish (optional)

Instructions

  1. Pat chicken thighs dry with paper towels to ensure crispiness.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, grated ginger, apple cider vinegar, and sesame oil.
  3. Place chicken thighs in the slow cooker and pour the sauce over them, turning to coat evenly.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
  5. Remove chicken from slow cooker and place on a parchment-lined baking sheet in a single layer.
  6. Discard the thin liquid from the slow cooker. Pour the remaining liquid into a small saucepan and heat over medium.
  7. Stir the cornstarch slurry into the simmering liquid and cook for 2-3 minutes until thickened.
  8. Brush the thickened glaze generously over the chicken thighs.
  9. Broil on high for 2-3 minutes, watching closely, until edges are bubbly and slightly charred.
  10. Let rest for 5 minutes before serving.

Notes

Use boneless, skin-on thighs for best texture. Patting the chicken dry is crucial for crisping. Do not skip the cornstarch slurry step to thicken the sauce. Watch closely during broiling as honey burns easily. Can be made gluten-free by swapping soy sauce for tamari.
