Instructions

  1. Line a standard half-sheet baking pan with parchment paper and set aside.
  2. Place the popped popcorn in a large glass mixing bowl (4-quart or larger) and remove any unpopped kernels or broken pieces.
  3. In a medium heavy-bottomed saucepan, melt the butter over medium-low heat until foamy but not browned (3-4 minutes).
  4. Add the brown sugar and corn syrup to the melted butter. Stir constantly with a heat-resistant silicone spatula until the sugar dissolves and the mixture becomes a smooth, glossy caramel (about 5 minutes).
  5. Bring the mixture to a gentle boil. Cook until it reaches 235ยฐF (soft-ball stage) or boil for exactly 2 minutes after bubbling begins, stirring frequently to prevent scorching.
  6. Remove from heat and immediately stir in the vanilla extract.
  7. Pour the hot caramel sauce over the popcorn in the glass bowl. Gently fold to coat every piece, working quickly before the caramel hardens (3-4 minutes).
