  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Vegetable oil or avocado oil for frying
  • ½ cup hot sauce (Frank’s RedHot recommended)
  • 3 tablespoons unsalted butter, melted (use vegan butter for dairy-free)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey or maple syrup (optional)
  • ½ teaspoon Worcestershire sauce (use vegan version if preferred)
  • Pinch of cayenne pepper
  • Optional garnishes: chopped fresh parsley or cilantro
  • Optional for serving: celery sticks or carrot sticks

Instructions

  1. Wash and cut the cauliflower head into bite-sized florets (1½ to 2 inches). Pat dry with a kitchen towel.
  2. In a large mixing bowl, whisk together flour, water (or almond milk), garlic powder, smoked paprika, salt, and black pepper until smooth and pancake batter consistency.
  3. Toss cauliflower florets into the batter, coating each piece evenly.
  4. Pour about 2 inches of oil into a deep frying pan and heat to 350°F (175°C).
  5. Fry coated florets in batches for 4–5 minutes, turning occasionally, until golden brown and crispy. Drain on a wire rack over a baking sheet.
  6. While frying, combine hot sauce, melted butter, apple cider vinegar, honey or maple syrup, Worcestershire sauce, and cayenne pepper in a small saucepan or microwave-safe bowl. Warm gently and stir to combine.
  7. Place fried cauliflower in a large bowl, pour warm sauce over, and toss gently to coat evenly.
  8. Garnish with chopped parsley or cilantro and serve immediately with celery or carrot sticks.

Notes

Pat cauliflower dry before battering to ensure crispiness. Fry in small batches to maintain oil temperature. Toss sauce gently to keep coating intact. Sauce can be made ahead and warmed before use. For a healthier alternative, use an air fryer at 400°F for 15-20 minutes, shaking halfway through.
