  • 8 ounces flank steak or sirloin, thinly sliced against the grain
  • 2 tablespoons cornstarch
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 3 cups broccoli florets (fresh or frozen)
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons vegetable oil or peanut oil
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon brown sugar
  • 1/4 cup beef broth or water
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)
  • Optional garnishes: sesame seeds, thinly sliced green onions

Instructions

  1. Thinly slice 8 ounces of flank steak against the grain into 1/4-inch thick strips and set aside.
  2. Marinate the beef slices with 2 tablespoons soy sauce and 1 teaspoon sesame oil for 10 minutes.
  3. Coat the marinated beef evenly with 2 tablespoons cornstarch.
  4. Whisk together 3 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon brown sugar, and 1/4 cup beef broth or water in a small bowl and set aside.
  5. Wash and cut 3 cups broccoli florets into bite-sized pieces. If fresh, blanch in boiling water for 1 minute, then drain and pat dry.
  6. Heat a wok or heavy skillet over high heat and add 2 tablespoons vegetable oil. Heat until very hot.
  7. Add beef strips in a single layer (in batches if needed) and sear for 1-2 minutes per side until golden and crispy. Remove and set aside.
  8. In the same pan, add more oil if needed, then stir-fry minced garlic and grated ginger for 30 seconds until fragrant.
  9. Add broccoli florets and stir-fry for 2-3 minutes until tender-crisp.
  10. Return beef to the pan. Stir the cornstarch slurry into the prepared sauce, pour over beef and broccoli, and toss to coat. Cook for 1-2 minutes until sauce thickens.
  11. Remove from heat and garnish with sesame seeds and green onions if desired. Serve immediately over steamed rice or noodles.

Notes

Ensure the pan is very hot before adding beef to achieve crispiness. Avoid overcrowding the pan to prevent steaming. Pat beef dry before marinating to reduce moisture. Cook beef in batches and keep warm in a low oven if needed. Blanch broccoli briefly for best texture. Add sauce at the end with cornstarch slurry to keep beef crispy.
