These crispy air fryer salmon bites with lemon dill are a quick and easy weeknight dinner that delivers a crunchy exterior and tender, flaky interior in just 15 minutes. The bright lemon and fresh dill finish makes each bite feel light and satisfying.

  • 1 lb salmon fillet, skin removed and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon melted butter or ghee (optional)
  • Lemon wedges for serving (optional)
  • Extra fresh dill for garnish (optional)
  • Flaky sea salt for finishing (optional)

Instructions

  1. Pat the salmon fillet dry with paper towels. Remove the skin if still attached. Cut the salmon into 1-inch cubes, keeping them uniform for even cooking.
  2. In a medium mixing bowl, combine the cubed salmon with olive oil, garlic powder, paprika, salt, and pepper. Toss gently until every piece is coated. Let sit for 5 minutes while the air fryer preheats.
  3. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  4. Place the salmon bites in a single layer in the air fryer basket, leaving space between each piece. Cook in batches if needed to avoid overcrowding.
  5. Air fry at 400°F for 6-8 minutes. At the 4-minute mark, flip each piece with tongs for even browning. The salmon is done when the internal temperature reaches 145°F and the outside is golden and crispy.
  6. While the salmon cooks, combine the chopped fresh dill, lemon juice, lemon zest, and melted butter (if using) in a small bowl. Stir together.
  7. As soon as the salmon bites come out of the air fryer, transfer them to a bowl and pour the lemon dill mixture over the top. Toss gently to coat. Serve immediately with extra lemon wedges and a sprinkle of flaky sea salt.

Notes

Pat the salmon very dry for maximum crispiness. Cut even pieces for uniform cooking. Don’t skip flipping halfway through. The lemon dill mixture goes on after cooking to prevent burning. For best results, serve immediately. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the air fryer at 350°F for 2-3 minutes.
