A quick and reliable weeknight dinner featuring bone-in, skin-on chicken thighs coated in a savory garlic and parmesan crust, cooked to perfection in an air fryer for maximum crispiness.

Ingredients

Scale
  • 2 pounds bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil or avocado oil
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ cup grated parmesan cheese

Instructions

  1. Preheat the air fryer to 390°F (200°C) for 3-5 minutes.
  2. Pat the chicken thighs completely dry with paper towels to ensure crispiness.
  3. In a large bowl, whisk together olive oil, garlic powder, onion powder, dried parsley, salt, and black pepper to form a paste.
  4. Add the chicken thighs to the bowl and toss to coat evenly, rubbing the mixture into the skin.
  5. Sprinkle the grated parmesan cheese over the chicken and press gently to adhere.
  6. Arrange the chicken thighs in the air fryer basket skin-side up, ensuring they are not touching.
  7. Cook for 12 minutes, then flip the chicken and cook for another 8-10 minutes.
  8. Check that the internal temperature reaches 165°F (74°C).
  9. Remove from air fryer and let rest for 5 minutes before serving.

Notes

Ensure chicken is patted completely dry before seasoning to achieve crispiness. Do not overcrowd the air fryer basket; cook in batches if necessary. If the cheese browns too quickly, lower the temperature by 10 degrees for the last few minutes. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the air fryer at 350°F for 3-4 minutes.
