  • 1 cup (227g) cold unsalted butter, cubed

  • 6 to 8 tablespoons ice water
  • 3 large fresh ripe peaches, peeled and diced (about 2 cups/300g)
  • ⅓ cup granulated sugar (for filling)
  • 1 teaspoon cinnamon (for filling)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)
  • 1 large egg beaten with 1 tablespoon water (egg wash)

Instructions

  1. In a large bowl, whisk together flour, 2 tablespoons sugar, and salt. Add cold butter cubes and blend with a pastry cutter or fingertips until mixture resembles coarse crumbs with pea-sized butter chunks.
  2. Gradually add 6 to 8 tablespoons ice water, stirring lightly until dough just comes together. Wrap dough in plastic wrap and chill for at least 30 minutes.
  3. While dough chills, combine diced peaches, ⅓ cup sugar, 1 teaspoon cinnamon, vanilla extract, lemon juice, and cornstarch in a medium bowl. Mix gently and set aside for 10 minutes.
  4. Roll chilled dough on a lightly floured surface to about 1/8 inch thickness. Cut out 4-inch circles using a cutter or glass. Re-roll scraps as needed.
  5. Place 1 to 2 tablespoons peach filling in center of each dough circle. Brush edges with water, fold dough over to form half-moon shape, and press edges firmly with a fork to seal.
  6. Whisk egg with water for egg wash. Brush each hand pie lightly with egg wash. Mix 2 tablespoons sugar with 1 teaspoon cinnamon and sprinkle over tops.
  7. Preheat air fryer to 350°F (175°C). Place 4 to 5 pies in basket without touching. Air fry for 10 to 12 minutes, flipping halfway, until golden and crispy. Repeat with remaining pies.
  8. Let pies cool on a wire rack for about 5 minutes before serving.

Notes

Keep ingredients cold to ensure flaky dough. Do not overfill pies to prevent leaking. Seal edges firmly with water and fork. Avoid overcrowding air fryer basket for even crisping. If crust browns too quickly, lower temperature by 10°F and cook longer. Frozen peaches can be used if fresh are unavailable. For vegan version, use plant-based butter and almond milk or aquafaba instead of egg wash. Gluten-free flour can replace all-purpose flour but dough will be more delicate.
