  • 1/2 teaspoon onion powder
  • 1 teaspoon fine sea salt
  • 2 tablespoons nutritional yeast

Instructions

  1. Soak the cashews in water for at least 4 hours or overnight. For a quicker method, soak in boiling water for 1 hour.
  2. Drain and rinse the soaked cashews under cold water.
  3. In a high-speed blender, combine soaked cashews, filtered water, lemon juice, apple cider vinegar, garlic powder, onion powder, salt, and nutritional yeast. Blend on high for 1-2 minutes until silky smooth, scraping down the sides as needed.
  4. Transfer the blended mixture to a medium saucepan over medium heat. Whisk constantly to avoid lumps.
  5. Once the mixture begins to thicken, gradually whisk in the tapioca starch.
  6. Continue whisking as the mixture heats and bubbles, becoming stretchy (about 3-5 minutes). It’s ready when it pulls away from the sides and shows a mozzarella-like stretch.
  7. Quickly transfer the hot mixture into a lightly oiled bowl or mold and smooth the surface.
  8. Let cool at room temperature for 20 minutes, then refrigerate for at least 2 hours to firm up.
  9. Once chilled, slice, melt, or stretch the mozzarella as desired.
