  • 4 large boneless, skinless chicken breasts
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup chopped sun-dried tomatoes (oil-packed, drained)
  • 2 cups fresh spinach

Instructions

  1. Pat chicken breasts dry and season both sides with salt, pepper, Italian seasoning, and garlic powder. Pound to 1/2 inch thickness if thick.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown. Remove to a plate.
  3. Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in chicken broth and scrape up brown bits from the bottom of the pan. Simmer for 2 minutes.
  5. Stir in heavy cream and let heat through for 1 minute.
  6. Add Parmesan cheese and sun-dried tomatoes. Stir constantly until cheese is melted and sauce is smooth (2-3 minutes).
  7. Return chicken to the skillet. Spoon sauce over top and simmer for 3-4 minutes until chicken reaches an internal temperature of 165°F.
  8. Toss in fresh spinach and stir until wilted (about 30 seconds). Remove from heat.
  9. Serve immediately, garnished with fresh parsley if desired.

Notes

Do not overcrowd the pan; cook in batches if necessary to ensure proper searing. Use fresh garlic and grate your own Parmesan for the best texture and flavor. Chicken can be dried out if overcooked, so remove from heat at 160°F as residual heat will finish cooking it. This recipe is naturally gluten-free but check broth and tomato labels. For a dairy-free version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
