  • 1/2 cup sun-dried tomatoes packed in oil, drained (about 70 g)
  • 3 cloves garlic, minced
  • 3 cups fresh baby spinach (about 90 g)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth, preferably low sodium (120 ml)
  • 1/3 cup grated Parmesan cheese (about 35 g)
  • 2 tablespoons olive oil, preferably extra virgin
  • 1 teaspoon Italian seasoning (or mix of dried basil, oregano, and thyme)
  • Salt and pepper to taste
  • Optional: red pepper flakes for a subtle kick

Instructions

  1. Pound the chicken breasts to about 1/2 inch (1.25 cm) thickness for even cooking. Pat dry with paper towels and season generously with salt, pepper, and Italian seasoning.
  2. Heat 2 tablespoons of olive oil over medium-high heat in a large skillet. When shimmering, add the chicken and cook for 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C). Remove and set aside.
  3. In the same pan, reduce heat to medium and add minced garlic. Stir for about 30 seconds until fragrant but not burnt. Toss in sun-dried tomatoes and cook for another 1-2 minutes, scraping browned bits from the pan for added flavor.
  4. Pour in chicken broth and heavy cream. Stir gently and bring to a simmer. Let cook for 3-4 minutes until the sauce thickens slightly, watching closely to prevent curdling.
  5. Stir in grated Parmesan cheese until melted. Add fresh spinach and cook until wilted, about 2 minutes. Season the sauce with salt, pepper, and optional red pepper flakes.
  6. Nestle the cooked chicken breasts back into the sauce. Spoon sauce over the top and simmer for another 2 minutes to meld flavors.
  7. Serve hot with plenty of sauce spooned over. Pairs well with pasta, mashed potatoes, or crusty bread.

Do not overcrowd the pan when searing chicken to ensure a golden crust. Keep heat moderate when adding cream to prevent curdling. Stir frequently and add cheese gradually to stabilize the sauce. If sauce thickens too much, add a splash of broth to loosen. Fresh herbs like basil or thyme can replace Italian seasoning. Adding spinach last keeps it vibrant and slightly crisp.
