Creamy Turkey Chili with White Beans

A rich, velvety turkey chili made with creamy cannellini beans that naturally thicken the stew. This easy, weeknight-friendly recipe delivers deep flavor and satisfying texture without requiring a slow cooker.

  • 1 tablespoon olive oil
  • 1 lb ground turkey (93% lean)
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 14 oz can low-sodium diced tomatoes
  • 1 cup low-sodium chicken or turkey broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 15 oz can cannellini or Great Northern beans, rinsed and drained
  • 1 square dark chocolate or 1/2 teaspoon unsweetened cocoa powder
  • Salt and black pepper to taste
  • Fresh lime juice for serving

Instructions

  1. Dice the onion and bell pepper, and mince the garlic.
  2. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  3. Add ground turkey and cook, breaking it up with a wooden spoon, until no longer pink (5-7 minutes). Drain excess fat if necessary.
  4. Reduce heat to medium. Add onion and bell pepper; cook for 5 minutes until softened.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Sprinkle in chili powder, cumin, and smoked paprika. Stir constantly for 1 minute to toast the spices.
  7. Stir in tomato paste and cook for 1 minute. Add diced tomatoes and broth, scraping up browned bits from the bottom of the pot.
  8. Bring to a boil, then reduce heat to low. Cover partially and simmer for 15 minutes.
  9. Add rinsed beans and dark chocolate/cocoa powder. Simmer for another 10-15 minutes. Mash some beans against the pot side if a thicker consistency is desired.
  10. Taste and season with salt and pepper. Stir in lime juice. Let sit for 5 minutes off heat before serving.

Notes

For a thicker chili, mash some of the beans against the side of the pot. If the chili is too thin, simmer uncovered for a few more minutes. If too thick, add a splash of broth or water. This recipe freezes well for up to 3 months.
