A simple, stress-free side dish featuring fluffy russet potatoes blended with sweet, caramelized roasted garlic, rich butter, and warm heavy cream for a luxurious texture.

  • 3 pounds Russet potatoes, peeled and cut into large chunks
  • 1 whole head of fresh garlic
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt (for boiling water)
  • 4 tablespoons unsalted butter, softened
  • 1/2 cup heavy cream, warmed
  • 1/2 teaspoon white pepper (optional)
  • 2 tablespoons fresh chives, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Cut the top off the garlic head to expose cloves, place on foil, drizzle with olive oil, wrap, and roast for 40-45 minutes until soft.
  2. While garlic roasts, place potato chunks in a large pot, cover with cold water by an inch, and add 1 teaspoon salt. Bring to a boil, then simmer for 15-20 minutes until tender.
  3. Drain potatoes well and return to the hot pot on low heat for 1-2 minutes to evaporate excess moisture.
  4. Squeeze roasted garlic cloves from skins into a bowl and mash into a smooth paste.
  5. Add softened butter and garlic paste to hot potatoes. Mash, then gradually add warmed heavy cream until desired consistency is reached.
  6. Season with salt and white pepper to taste. Fold in half the chives and serve immediately, garnished with remaining chives.

Notes

Always warm the cream and butter before adding to prevent the potatoes from cooling down and the fat from congealing. Do not overmix the potatoes to avoid a gluey texture. For a dairy-free option, substitute butter with olive oil or plant-based butter and heavy cream with oat milk or coconut cream.
