  • 1 cup heavy cream
  • 2 cups heavy whipping cream, cold
  • ยผ cup powdered sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a 9×13 inch baking dish and dust lightly with flour.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat softened butter and granulated sugar on medium-high speed for 3-4 minutes until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Reduce mixer speed to low. Add dry ingredients in three additions, alternating with pumpkin puree in two additions. Start and end with dry ingredients. Mix until just combined.
  6. Pour batter into prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cake cool in pan for 10 minutes, then remove to a wire rack to cool completely.
  8. In a large pitcher or bowl, whisk together sweetened condensed milk, whole milk, and heavy cream until smooth.
  9. Once cake is cool, poke holes all over the surface with a fork or skewer. Pour milk mixture evenly over the cake. Let soak for at least 1 hour, preferably overnight.
  10. Just before serving, whip cold heavy cream, powdered sugar, cinnamon, and vanilla until stiff peaks form.
  11. Spread whipped cream over the soaked cake. Slice and serve chilled.

Notes

Ensure the cake is completely cool before adding the milk soak to prevent it from dissolving. Use 100% pure pumpkin puree, not pumpkin pie filling. For best results, let the cake soak overnight in the refrigerator. Keep all equipment cold when whipping the cream for best volume.
