A unique and delicious dip that balances sweet pumpkin with savory taco spices, creating a creamy, rich appetizer perfect for fall gatherings and game days.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1 cup pumpkin puree (not pie filling)
  • 2 tablespoons granulated sugar
  • 1 packet taco seasoning mix (about 1 ounce)
  • 1 teaspoon vanilla extract
  • 1 cup shredded cheddar cheese
  • 2 stalks green onions, finely chopped
  • Tortilla chips for serving

Instructions

  1. Soften the cream cheese by leaving it out for 30 minutes or microwaving on low power in 15-second intervals.
  2. In a large mixing bowl, combine the softened cream cheese, pumpkin puree, granulated sugar, and vanilla extract.
  3. Beat the mixture with a hand mixer on medium speed for 2-3 minutes until smooth and creamy, scraping down the sides as needed.
  4. Sprinkle the taco seasoning mix over the cream cheese mixture and mix gently but thoroughly to distribute spices evenly.
  5. Gradually fold in the shredded cheddar cheese using a spatula until just incorporated, keeping the mixture airy.
  6. For a warm dip, spread the mixture into a small baking dish or slow cooker and bake at 350°F (175°C) for 15-20 minutes until melted and bubbly. For cold serving, refrigerate for 30 minutes.
  7. Garnish with finely chopped green onions and serve immediately with sturdy tortilla chips.

Notes

Ensure cream cheese is fully softened to avoid lumps. Strain pumpkin puree if it appears watery to prevent a runny dip. The dip can be made up to 24 hours in advance; let it come to room temperature before serving. Do not freeze as the texture may become grainy.
