  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For toppings (optional): sliced banana, drizzle of peanut butter, dark chocolate chips, chopped peanuts, sprinkle of cinnamon

Instructions

  1. Mash the ripe banana in a mixing bowl or directly in your jar until mostly smooth with a few tiny lumps.
  2. Add the milk, peanut butter, maple syrup or honey, and vanilla extract. Stir to combine.
  3. Add the rolled oats, chia seeds, and a tiny pinch of salt. Mix thoroughly until the peanut butter is fully incorporated and no dry oats remain.
  4. Seal the jar or cover the bowl tightly and refrigerate for at least 4 hours, but overnight (8 to 12 hours) is best.
  5. In the morning, stir the oats. If too thick, add a splash of milk. Add desired toppings and enjoy cold or microwave for 45 to 60 seconds for warm oats.
