  • 4 cups chicken broth, low-sodium

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup heavy cream (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Cook for 5-7 minutes until softened. Add minced garlic, thyme, rosemary, smoked paprika, black pepper, and salt. Stir for 1 minute until fragrant.
  2. Add the rice and liquids: Pour in the wild rice blend and stir to coat. Add chicken broth and water. Stir, scraping up browned bits. Bring to a boil over high heat.
  3. Simmer the soup: Reduce heat to low, cover, and simmer for 30-35 minutes until rice is tender and starting to split open.
  4. Add the chicken: Stir in cooked chicken and let warm through for 2-3 minutes. Taste and adjust salt and pepper.
  5. Create the creamy texture: Use an immersion blender to blend about half the soup directly in the pot, pulsing a few times until creamy but still chunky. Alternatively, blend 2 cups of soup in a regular blender and stir back in.
  6. Finish and serve: If using heavy cream, stir it in now. Simmer for 2-3 minutes to thicken. Ladle into bowls, garnish with fresh parsley, and serve hot.

Notes

For a dairy-free version, omit the heavy cream and use the blending method for creaminess. For extra richness, add a splash of full-fat coconut milk. The soup thickens as it sits; add a splash of broth when reheating. Leftovers taste even better the next day.
