A comforting and easy one-pot beef stroganoff recipe with tender beef, creamy sauce, and egg noodles, perfect for quick weeknight dinners.

Ingredients

Scale
  • 1 pound beef sirloin or top round, thinly sliced
  • 8 ounces wide egg noodles
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 8 ounces cremini or white button mushrooms, sliced
  • 3 cups low sodium beef broth
  • 3/4 cup sour cream (full-fat or light)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Prepare the Ingredients (10 minutes): Slice the beef thinly against the grain. Chop the onion, mince the garlic, and slice the mushrooms evenly.
  2. Brown the Beef (5-7 minutes): Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add beef in batches, season with salt and pepper, and cook until browned but not fully cooked through, about 2-3 minutes per batch. Remove beef and set aside.
  3. Sauté Vegetables (5 minutes): In the same skillet, add remaining butter. Cook onions and mushrooms until softened and golden, about 4 minutes. Add garlic in the last minute, stirring to prevent burning.
  4. Make the Sauce Base (2 minutes): Sprinkle flour over the veggies and stir well to coat. Slowly pour in beef broth while stirring constantly to avoid lumps.
  5. Add Seasonings and Noodles (20-25 minutes): Stir in Worcestershire sauce, smoked paprika, salt, and pepper. Bring to a gentle boil, add egg noodles and browned beef back into the pot. Reduce heat to medium-low, cover, and simmer until noodles are tender, about 12-15 minutes. Stir occasionally to prevent sticking.
  6. Finish with Sour Cream (2 minutes): Remove skillet from heat. Stir in sour cream gently until sauce is creamy and smooth. Adjust seasonings if needed.
  7. Serve and Garnish: Sprinkle chopped fresh parsley on top before serving.

Notes

Do not overcrowd the pan when browning beef to avoid steaming. Slice beef thinly against the grain for tenderness. Use room temperature ingredients to prevent curdling. Stir noodles occasionally to prevent sticking. Adjust sauce thickness by adding broth or simmering uncovered. For gluten-free, substitute flour with gluten-free blend. For dairy-free, use coconut yogurt or cashew cream instead of sour cream and olive oil instead of butter.
