  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter (14g), optional but recommended
  • Optional: ½ teaspoon espresso powder to intensify chocolate flavor
  • Optional: ¼ cup semi-sweet chocolate chips (45g) for extra gooey texture

Instructions

  1. Combine dry ingredients: In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt until no lumps remain.
  2. Add milk gradually: Slowly pour in milk while whisking constantly to keep the mixture smooth.
  3. Cook the mixture: Place saucepan over medium heat and whisk continuously. After 4-5 minutes, the mixture will start to thicken and bubble at the edges.
  4. Boil and thicken: Continue whisking for 1-2 more minutes until pudding is thick and glossy. Avoid stopping whisking to prevent burning.
  5. Remove from heat and add flavor: Stir in vanilla extract and butter until melted and incorporated. Fold in optional espresso powder or chocolate chips if desired.
  6. Serve or chill: Enjoy warm immediately or transfer to serving dishes and refrigerate for at least 1 hour to set and become creamier.
