  • 2 cups (480 ml) heavy whipping cream, cold
  • 1 teaspoon vanilla extract
  • Pinch of salt (optional)

Instructions

  1. Prepare the strawberries: In a medium bowl, toss the sliced strawberries with ¼ cup of sugar and lemon juice. Let sit at room temperature for about 10 minutes to macerate.
  2. Puree the strawberries: Using a blender or food processor, pulse the macerated strawberries until slightly chunky but mostly smooth. Set aside.
  3. Beat the cream cheese: In a large mixing bowl, beat the softened cream cheese with the remaining ¼ cup sugar until smooth and fluffy.
  4. Add sweetened condensed milk and vanilla extract to the cream cheese mixture and mix until fully incorporated.
  5. Whip the heavy cream: In a separate cold bowl, whip the heavy cream with an electric mixer on medium-high speed until soft peaks form.
  6. Fold the whipped cream gently into the cream cheese mixture to keep the airiness intact.
  7. Fold the strawberry puree into the mixture, swirling gently to create a marbled appearance.
  8. Pour the mixture into a freezer-safe container, smooth the top, cover tightly, and freeze for at least 6 hours or overnight.
  9. Before serving, let the ice cream sit at room temperature for 5-10 minutes for easier scooping.

Notes

Make sure cream cheese is fully softened to avoid lumps. Whip heavy cream to soft peaks only to maintain light texture. Fold ingredients gently to keep airiness. Let ice cream freeze for at least 6 hours for best texture. If ice crystals form, stir gently before serving. Frozen strawberries can be used if thawed and drained well.
