  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup pecans, finely chopped
  • 1/4 tsp salt
  • 16 oz full-fat cream cheese, softened
  • 1 cup pumpkin puree
  • 1/2 cup real maple syrup
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 2 tbsp maple syrup (for topping)
  • 1/4 cup chopped pecans (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9 inch square baking pan.
  2. In a medium bowl, mix flour, sugar, salt, and finely chopped pecans. Add softened butter and mix until it resembles coarse sand.
  3. Press the crust mixture firmly into the bottom of the prepared pan and bake for 10 minutes until lightly golden. Let cool.
  4. In a large bowl, beat cream cheese until smooth. Add maple syrup, vanilla extract, and pumpkin pie spice; mix until combined.
  5. Add eggs one at a time, mixing on low speed just until incorporated. Do not overmix.
  6. Pour the filling over the pre-baked crust and smooth the top.
  7. Mix 2 tbsp maple syrup with 1/4 cup chopped pecans and sprinkle evenly over the bars.
  8. Bake at 350°F (175°C) for 35-40 minutes until edges are set and the center is slightly jiggly.
  9. Cool in the pan for at least 1 hour, then refrigerate for at least 4 hours (preferably overnight) before cutting.

Notes

Ensure cream cheese is fully softened to avoid lumps. Do not overmix the batter after adding eggs to prevent cracking. For best texture, toast pecans before chopping. Bars must be chilled completely before cutting to set properly.
