  • 1 ½ cups (225 g) ripe mangoes, peeled and chopped (fresh or frozen)
  • 1 cup (240 ml) plain Greek yogurt, full-fat
  • ½ cup (120 ml) milk (whole or plant-based like almond or oat)
  • 1 to 2 tablespoons (1530 ml) honey, adjust to taste
  • 2 tablespoons pistachios, shelled and chopped (lightly toasted if desired)
  • A pinch (about 10 strands) saffron threads, soaked in 1 tablespoon warm water for 5 minutes
  • ¼ teaspoon cardamom powder (optional)
  • ½ cup ice cubes (optional)

Instructions

  1. Soak the saffron threads in 1 tablespoon (15 ml) of warm water for 5 minutes to release flavor and color.
  2. Peel and chop ripe mangoes into chunks (about 1 ½ cups / 225 g). If using frozen mango, let it thaw slightly.
  3. Lightly toast 2 tablespoons of shelled pistachios in a dry pan over medium heat for 2-3 minutes, stirring often. Let cool and chop roughly.
  4. In a blender, combine mango chunks, Greek yogurt, milk, honey (start with 1 tablespoon), cardamom powder if using, and the saffron with its soaking water.
  5. Blend on high for 1 to 2 minutes until creamy and smooth. Add more milk if too thick and blend again.
  6. Optionally, add ½ cup ice cubes and pulse blend until crushed and incorporated for extra chill.
  7. Pour smoothie into chilled glasses. Sprinkle toasted chopped pistachios on top and garnish with a few saffron strands if desired.
  8. Taste and adjust sweetness with more honey or spice with more cardamom if preferred. Blend briefly again if needed.

Notes

Soak saffron before use to release flavor and color. Use ripe mangoes for best sweetness. Toast pistachios lightly for enhanced flavor. For ultra-smooth texture, blend yogurt alone first. Adjust milk quantity to control smoothie thickness. Store leftovers in airtight container in fridge up to 24 hours; stir or re-blend before serving. Avoid freezing after blending to maintain texture.
