This creamy, high-fiber overnight oats recipe uses chia seeds and Greek yogurt for a thick, pudding-like texture. It’s a quick, no-cook breakfast that keeps you full until lunch.

  • ½ cup (45g) rolled oats (old-fashioned oats)
  • 1 tablespoon (12g) chia seeds
  • Pinch of salt
  • ½ cup (120ml) milk of choice (e.g., unsweetened vanilla almond milk)
  • ¼ cup (60g) plain Greek yogurt
  • 1 tablespoon (15ml) maple syrup or honey
  • ¼ teaspoon vanilla extract
  • ¼ cup (about 40g) fresh or frozen berries (blueberries, strawberries, raspberries, or a mix)

Instructions

  1. In a mason jar or container, combine rolled oats, chia seeds, and a pinch of salt. Stir to distribute chia seeds evenly.
  2. Add milk, Greek yogurt, maple syrup or honey, and vanilla extract. Drizzle liquid while stirring to incorporate smoothly.
  3. Stir vigorously for at least 30 seconds, ensuring chia seeds are fully distributed and no clumps remain.
  4. Fold in berries gently. If using frozen berries, do not thaw them first.
  5. Seal the jar and refrigerate for at least 4 hours, but ideally 8 to 12 hours (overnight).
  6. In the morning, stir the oats. If too thick, add 1-2 tablespoons of milk; if too thin, let sit another hour or add a teaspoon of chia seeds.
  7. Serve cold or microwave for 30-45 seconds if desired. Top with extra berries, maple syrup, or granola.

Notes

For best texture, use rolled oats (not quick oats). Stir well to avoid chia clumps. Batch prep up to 5 days ahead; add berries the night before for later jars. If using frozen berries, oats may look thinner in the morning but will thicken after stirring.
