Creamy Garlic Scape and White Bean Hummus

A smooth, garlicky, and fresh homemade hummus made with garlic scapes and white beans, perfect for a quick and healthy snack.

Ingredients

  • 45 garlic scape stalks, chopped
  • 1 can (15 oz / 425 g) cannellini or great northern beans, drained and rinsed
  • 3 tablespoons tahini
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 medium lemon (about 2 tablespoons)
  • 1 small garlic clove, minced (optional)
  • ½ teaspoon ground cumin
  • ½ teaspoon sea salt, or to taste
  • 2 to 4 tablespoons water, as needed
  • Pinch of freshly ground black pepper

Instructions

  1. Rinse the garlic scapes well and cut off the tough ends. Chop into 1-inch pieces (3-5 minutes).
  2. In a food processor or blender, combine chopped garlic scapes, drained white beans, tahini, olive oil, lemon juice, minced garlic (if using), cumin, and sea salt. Pulse a few times to start blending (1-2 minutes).
  3. While blending, slowly add 2-4 tablespoons of water to loosen the mixture. Stop occasionally to scrape down the sides with a rubber spatula until smooth and creamy (3-5 minutes).
  4. Taste and adjust seasoning by adding more salt, lemon juice, olive oil, or garlic scapes if needed. Blend briefly again to mix (about 2 minutes).
  5. Transfer to a serving bowl, drizzle with olive oil and sprinkle with cracked black pepper. Serve immediately or refrigerate for up to 3 days. Allow to come to room temperature before serving.

Notes

If garlic scapes are unavailable, substitute with half a clove of fresh garlic to avoid overpowering the dip. For a nut-free version, replace tahini with sunflower seed butter. Add smoked paprika for a zestier flavor. Blend longer for silkier texture and add water gradually to avoid runniness. Rinse canned beans well to reduce canned taste.
