This creamy cucumber salad is the ultimate refreshing side dish for summer. With crisp cucumbers, tangy sour cream, and fresh dill, it’s a simple yet perfect recipe that comes together in minutes.

  • 2 large English cucumbers (or Persian cucumbers)
  • 1 cup full-fat sour cream
  • 2 tablespoons white wine vinegar (or fresh lemon juice)
  • 1 tablespoon finely chopped fresh dill
  • 1/2 medium red onion, thinly sliced
  • 1 to 1 1/2 teaspoons fine sea salt
  • Freshly cracked black pepper, to taste
  • Pinch of sugar (optional)

Instructions

  1. Wash 2 large English cucumbers thoroughly. If using standard cucumbers, peel and scoop out seeds. Slice cucumbers into rounds about 1/8-inch thick.
  2. Place cucumber slices in a colander set over a bowl. Sprinkle with 1 to 1 1/2 teaspoons fine sea salt and toss gently. Let sit for 30 minutes to draw out excess water.
  3. Rinse cucumber slices quickly with cold water to remove excess salt. Pat very dry with a clean kitchen towel or paper towels.
  4. In a large mixing bowl, combine 1 cup sour cream, 2 tablespoons white wine vinegar (or lemon juice), 1 tablespoon chopped fresh dill, a pinch of black pepper, and optional pinch of sugar. Whisk until smooth and creamy.
  5. Thinly slice half a medium red onion. If desired, soak slices in ice water for 10 minutes to mellow the bite, then drain and pat dry.
  6. Add dried cucumber slices and red onion to the bowl with dressing. Gently fold until everything is well coated.
  7. Cover and refrigerate for at least 30 minutes to allow flavors to meld. For best results, chill for 1-2 hours.
  8. Before serving, stir the salad, adjust seasoning if needed, and garnish with extra fresh dill and black pepper. Serve cold.

Notes

Don’t skip the salting step—it’s crucial for preventing a watery salad. Pat the cucumbers very dry after salting. The salad is best on the first day but can be stored in the fridge for up to 2 days. Do not reheat. For a dairy-free version, use plain vegan sour cream or thick coconut yogurt.
