  • 8 oz cream cheese, softened to room temperature
  • 2 cans (15 oz each) Great Northern or cannellini beans, drained and rinsed
  • 2 cans (4 oz each) diced green chiles
  • 2 cups low-sodium chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste (start with 1 tsp salt, 1/2 tsp pepper)
  • Optional toppings: fresh cilantro, shredded Monterey Jack cheese, sliced jalapeños, sour cream, avocado, tortilla chips

Instructions

  1. Prep the chicken: If using raw chicken breasts, trim excess fat and place in the bottom of the slow cooker. If using rotisserie chicken, skip this step and add shredded chicken later.
  2. Add the beans and chiles: Drain and rinse the white beans. Add them to the slow cooker along with the diced green chiles (do not drain the chiles).
  3. Add the broth and spices: Pour the chicken broth over the chicken, beans, and chiles. Add cumin, garlic powder, onion powder, salt, and pepper. Stir gently to combine.
  4. Cook on low for 6-8 hours or high for 3-4 hours, until chicken is tender and easy to shred.
  5. About 30 minutes before serving, remove the chicken breasts from the slow cooker and shred with two forks. Return shredded chicken to the slow cooker.
  6. Cut the softened cream cheese into cubes and add to the slow cooker. Stir until completely melted and the chili is smooth and creamy (about 2-3 minutes). If needed, turn slow cooker to high briefly to help melting.
  7. Let the chili simmer for another 10 minutes on low, stirring occasionally. Taste and adjust seasoning if needed.
  8. Ladle into bowls and serve with desired toppings.

Notes

For best results, soften cream cheese to room temperature before adding. If using rotisserie chicken, add shredded chicken in the last 30 minutes of cooking. For a thicker chili, mash half a can of beans before adding. Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
