Instructions

  1. Cut the softened cream cheese into small cubes. If still hard, microwave for 30 seconds until soft but not melted.
  2. Add the cubed cream cheese, shredded chicken, and buffalo sauce directly into a slow cooker.
  3. Stir gently to combine. The cream cheese may not fully incorporate yet.
  4. Cover and cook on LOW for 2 to 3 hours. Do not cook on HIGH to prevent separation.
  5. After 2 hours, stir thoroughly. If lumps remain, cook for another 30 minutes and stir again until smooth and bubbly.
  6. Taste and adjust salt if needed, then serve warm.

Notes

Ensure cream cheese is softened to avoid lumps. Use full-fat cream cheese for best texture. If using canned chicken, drain well to prevent watery dip. Can be made in oven at 350°F for 20-25 minutes. Store leftovers in fridge for up to 3 days; reheat with a splash of milk or broth.
