  • 1/4 cup (30g) all-purpose flour
  • 2 cups (480ml) low-sodium chicken broth
  • 12 tablespoons turkey drippings (optional)
  • 1012 fresh sage leaves
  • 1/2 teaspoon salt (or to taste)
  • Black pepper (to taste)
  • A pinch of nutmeg
  • 2 tablespoons heavy cream (optional)

Instructions

  1. Rinse and pat dry sage leaves, removing them from stems. Tear large leaves in half.
  2. Melt butter in a medium saucepan over medium heat. Stir constantly until foam subsides and milk solids turn golden brown with a nutty aroma (3-5 minutes).
  3. Add sage leaves to the browned butter and stir for 30 seconds to infuse flavor.
  4. Reduce heat to medium-low. Sprinkle flour over the butter and whisk vigorously to form a roux. Cook for 1-2 minutes to remove raw flour taste.
  5. Slowly pour in chicken broth (and turkey drippings if using), whisking constantly to prevent lumps.
  6. Bring to a gentle simmer and cook for 3-5 minutes until thickened to desired consistency.
  7. Remove from heat. Stir in nutmeg, salt, and pepper. Add heavy cream if desired.
  8. Strain through a fine-mesh sieve to remove sage leaves and bits for a smooth texture. Serve immediately.

Notes

Watch the butter closely as it burns easily. Use cold broth to help prevent lumps. Straining is recommended for a silky smooth texture. Can be stored in the fridge for up to 3 days or frozen for 3 months.
