  • 1 cup (200g) red lentils, rinsed thoroughly
  • 1 medium onion, finely chopped
  • 1 medium carrot, peeled and diced
  • 2 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 4 cups (1 liter) vegetable broth
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Juice of half a lemon
  • Salt and pepper to taste
  • A handful fresh parsley, chopped

Instructions

  1. Rinse the lentils under cold water until the water runs clear, about 3 minutes.
  2. Heat 2 tablespoons olive oil in a large pot over medium heat. Add chopped onion and diced carrot; cook until softened and fragrant, about 5-7 minutes. Add minced garlic and cook for another 1 minute.
  3. Stir in 1 tablespoon tomato paste, 1 teaspoon ground cumin, and 1 teaspoon smoked paprika. Cook for 2 minutes, stirring constantly.
  4. Add rinsed lentils and 4 cups vegetable broth to the pot. Stir to combine and bring to a boil over medium-high heat.
  5. Reduce heat to low, partially cover, and simmer gently for about 25 minutes until lentils are very soft and starting to break down. Stir occasionally.
  6. Blend the soup using an immersion blender until smooth and velvety. Alternatively, blend in batches using a regular blender carefully.
  7. Return soup to pot if blended separately. Stir in juice of half a lemon and season with salt and pepper to taste.
  8. Ladle soup into bowls, garnish with chopped parsley, and drizzle with olive oil before serving.

Notes

If soup is too thick after blending, add a splash of broth or water to loosen. Avoid boiling vigorously to prevent grainy texture. Tomato paste intensifies flavor—don’t skip it. Use an immersion blender for smooth texture or mash lentils for chunkier soup. Season at the end to avoid over-salting.
